These granola bars are simple to make and they’re a great snack to take on hikes as Essie would say. Hope you enjoy them!
ESSIE’S NO-BAKE GRANOLA BARS
1 cup pitted dates
1/4 cup honey
1/4 cup creamy peanut butter
3/4 cup raw almonds, crushed
1 1/2 cups oats
1/2 cup mini chocolate chips
1/2 cup dried cranberries or raisins
1/4 cup shredded coconut, unsweetened
In a blender or food processor, blend the dates and set aside. In a medium saucepan, melt the peanut butter, and stir in honey. Combine the oats, almonds, dried cranberries or raisins, chocolate chips, and coconut in a large bowl. Pour in the honey and peanut butter mixture, and mix together. Add in the blended dates, and mix well.
Transfer mixture into a greased 9×13 casserole dish. Wet hands with water and press mixture into the dish. Let it sit for a couple of hours, and then cut into bars and serve.
NOTE: You can create different flavors by substituting the almonds and dried cranberries for various nuts and dried fruits.
